Vegan Hibiscus Coconut Cream Tart

Ingredients

Makes a dozen

For the crust:
1⅓ cup rolled oats
1 cup Spudsy Crunchy Cinnamon Sweet Potato Puffs
2 tbsp Suncore Foods® Hemp Seeds 
¼ tsp cinnamon
2 tbsp nut butter
2 tbsp maple syrup
2 tbsp coconut oil

For the filling:
1 cup coconut cream
¼ cup coconut sugar
2 tbsp cornstarch
1 tbsp cold water
2 tsp Suncore Foods® Fuchsia Hibiscus Supercolor Powder
1 tsp Suncore Foods® Pink Pitaya Supercolor powder

Garnish:
¼ cup coconut whipped cream
2 tbsp Suncore Foods® Toasted Coconut Chips
2 tbsp crushed Spudsy Crunchy Cinnamon Sweet Potato Puffs
¼ cup mixed berries

Directions

Make the crust:
1. Preheat oven to 350F. 

2. In a food processor, combine the oats, Sweet Potato Puffs, hemp seeds, and pulse until coarsely ground. 

3. Add in the nut butter, maple syrup and coconut oil and pulse until the mixture can be pressed together with your fingers without it crumbling. If it’s too dry, add a little more coconut oil. 

4. Place the tart crust mixture into an 8″ tart pan with a removable bottom. Press firmly down and up along the edges. Use the bottom of a drinking glass to press the tart so it’s even. 

5. Bake the tart crust for 20 minutes at 350F, until lightly golden brown.

6. Remove from oven and cool.

 

Make the filling:
1. In a small saucepan, add the coconut cream, coconut sugar, and heat over medium-low heat.

2. Add the 2 tbsp of cornstarch to 1 tbsp cold water and stir so the cornstarch is dissolved.

3. When the coconut cream is almost at a boil, add in the cornstarch slurry and whisk until slightly thickened, about 2-3 minutes.

4. Remove the coconut cream mixture from the heat and add in the Supercolor powders. Whisk to incorporate.

5. When the filling has cooled, pour it into the tart crust. Let it set in the fridge for 2-3 hours.

6. Garnish with coconut whipped cream, toasted coconut chips, crushed sweet potato puffs, and mixed berries.

7. Serve chilled.
