Quinoa & Chickpea Curry with Cauliflower

1 large onion, diced
3 cloves garlic, minced
1 tbsp ginger root, minced
1 tsp each: Suncore Foods® Rose Salt, Suncore Foods® Turmeric Powder, garam masala
1/2 tsp each: Paprika, ground coriander, ground cumin, black pepper
1 large tomato, diced or pureed (200g)
1 cup water
1/2 head cauliflower, chopped (500g)
1 1/2 cups cooked chickpeas (one 14-oz can, or 300g drained)
1 cup full-fat coconut milk (half of one 14-oz can, or 200g)
2/3 cup Suncore Foods® Snow Quinoa Flakes
1. In a large pot, heat some water/oil and add the onion. Saute for 5 minutes, then add in garlic, ginger, and spices. Once fragrant, add in the tomato, cauliflower, and water.
2. Bring to a boil, then cover the pot and let simmer for 10 minutes. If needed, add in more water to prevent sticking. Stir in chickpeas, coconut milk, and quinoa flakes, then simmer for another 3-5 minutes, until cauliflower is tender. Season with lemon juice + more spices to taste and serve warm.
3. If using regular quinoa, add it in with the tomatoes with an additional 1/2 cup water.
