Quinoa Chickpea Curry with Cauliflower

1 large onion, diced
3 cloves garlic, minced
1 tbsp ginger root, minced
1 tsp each: Salt, turmeric, and garam masala
1/2 tsp each: Paprika, ground coriander, ground cumin, and black pepper
1 large tomato, diced or pureed (200g)
1 cup water
1/2 head cauliflower, chopped (500g)
1 1/2 cups cooked chickpeas (one 14-oz can, or 300g drained)
1 cup full-fat coconut milk (half of one 14-oz can, or 200g)
2/3 cup Suncore Foods® Snow Quinoa Flakes
1. In a large pot, heat some water/oil and add the onion. Saute for 5 minutes, then add in garlic, ginger, and spices. Once fragrant, add in the tomato, cauliflower, and water.
2. Bring to a boil, then cover the pot and let simmer for 10 minutes. If needed, add in more water to prevent sticking. Stir in chickpeas, coconut milk, and Suncore Foods® Snow Quinoa Flakes, then simmer for another 3-5 minutes, until cauliflower is tender. Season with lemon juice + more spices to taste and serve warm.
3. If using regular quinoa, add it in with the tomatoes with an additional 1/2 cup water.
