Ebony Carrot Pumpkin Seed Loaf Bread

360g bread flour
15g Suncore Foods® Ebony Carrot Supercolor Powder
1 tsp active dry yeast
2 tsp sugar
1/4 tsp Suncore Foods® Rose Salt
25g coconut oil or butter
50g pumpkin seeds, toasted
1. In a stand mixer, combine all ingredients except for coconut oil/butter and pumpkin seeds. Cover and let sit for 20 mins. Then turn on the mixer, add the oil/butter mix on low-medium speed with the hook attachment until the dough comes together, about 10-12 mins. Smooth the dough. Cover and let let proof for 1 hour until doubled in size.
2. Transfer the dough on the counter top. Roll out dough until they form thin rectangle, gently pull from centre out to form a large thin rectangle shape. Sprinkle pumpkin seeds. Pick up one edge and fold into the center. Pick up other edge and fold into the center over first section. Sprinkle pumpkin seeds. Fold the top down half way. Use a rolling pin to flatten the dough, begin rolling up the dough along the wide/long side of the rectangle, Place it in a bread pan and let rise until doubled in size, about 1 hour. Bake at 180c for 35 minutes.
