Trail Mix Muffins with Quinoa Flakes and Coconut Streusel

Did we just hear "trail mix, but in the form of a muffin"?!? Ummmm YES PLEASE We couldn't ask for a better nutritious and delicious treat! Created these Trail Mix Quinoa Flake Muffins with Streusel using Suncore Foods® Quinoa Flakes, Hemp Seeds, Goji Berries, and Rose Salt. How fun & creative! The best part is, you can customize this recipe with your favorite trail mix fixin's! Nuffin is gonna stop us from getting our hands on these muffins!

1/2 cup vegan butter
1/2 cup applesauce (unsweetened)
1 1/4 cup cane sugar
1/4 cup maple syrup
1 tbsp vanilla extract
1/4 cup flax meal
1/4 cup Suncore Foods® Hemp Seeds
1/4 cup unsweetened cashew milk
2 cups all purpose gluten free flour
1/2 cup almond flour
1/2 cup + 2 tbsp Suncore Foods® Quinoa Flakes
1 1/2 tsp cinnamon
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp xanthan gum (no need to add store-bought blend already contains it)
3/4 tsp Suncore Foods® Rose Salt
3/4 cup chopped pecans
3/4 cup chocolate chips
1/2 cup dried fruit of choice(unsweetened cherries, cranberries, Suncore Foods® Goji or Black Goji Berries, or blueberries)
1/2 cup pumpkin seeds
1/3 cup shredded coconut

1/2 cup old fashioned rolled oats
1/4 cup shredded coconut
1/4 cup chopped pecans
2 tbsp gluten free all purpose flour
2 tbsp maple syrup
3/4 tsp cinnamon
1/8 tsp Suncore Foods® Rose Salt
2 tbsp melted vegan butter


1. Preheat oven to 335 F. Cream butter, applesauce, sugar, maple syrup, and vanilla extract in a stand mixer (or use electric hand mixer). Add in flax meal, hemp seeds, and cashew milk and continue mixing.

2. In a separate bowl, whisk together gluten free flour, almond flour, and quinoa flakes, cinnamon, baking soda, baking powder, xanthan, and salt. Add into wet ingredients in thirds and mix until well combined. Stir in pecans, chocolate chips, dried fruit, pumpkin seeds, and shredded coconut. Let mixture sit for 15-20 minutes.

3. Meanwhile, stir together all streusel ingredients well.

4. Line muffin tin, fill to top and then top with streusel. Bake for 30-33 minutes. Let cool before eating.
