Supercolor Rainbow Waffles

There's no better way to serve dessert for breakfast than with a plate of every colors possible in the rainbow waffles! Especially when the colors are plant-based, gluten-free, and simply delicious. If you're looking for ultra fun and colorful pancakes, these ones are definitely a winner and mouthwatering showstopper!

1 1/2 c. GF flour blend
1 c. oat flour
1/4 c. coconut sugar
1 1/2 tbsp baking powder
1/4 tsp Suncore Foods® Rose Salt
2 eggs (or flax eggs)
1/3 c. coconut oil, melted & cooled
1 1/2 c. almond milk
1 tsp vanilla
1-2 tsp assorted Suncore Foods® Superfood Powders (I used Pink Pitaya, Blue Butterfly Pea, and Amethyst Acai)


Heat a waffle iron and grease with coconut oil spray. Whisk together dry ingredients and mix wet ingredients separately. Pour wet ingredients into dry and stir. Divide batter into 3 bowls, stir in 1 - 2 tsp assorted Suncore Foods® Superfood Powders! Pour 1/2 c. batter into waffle iron and cook according to directions!!
