Rhodolite Maqui Berry Chia Seed Popsicles
Summer may be over, but that won't stop us from enjoying some refreshing popsicles especially when the color is so eye-catching beautiful and are made with no artificial dyes or food colorings! Just simply good, plant-based . Made using Suncore Foods® Chia Seeds, Suncore Foods® Rhodolite Maqui Berry Supercolor Powder, coconut milk, blueberries and maple syrup. But most importantly, these popsicles are absolutely delicious – truly a vivid delicious treats for all year long!

Yields 6-10 popsicles
-1 14-oz can full-fat coconut milk
-1/2 cup blueberries, pureed
-1/4 cup Suncore Foods® Chia Seeds Black or White
-3 tbsp maple syrup, or to taste
-1-2 tbsp Suncore Foods® Rhodolie Maqui Berry Supercolor Powder
In a bowl, whisk together the coconut milk, blueberry puree, chia seeds, and maple syrup. Place in the fridge to firm up for an hour. Then, mix in the maqui berry powder, one teaspoon at a time, until you reach the desired color. Pour the mixture into popsicle molds and insert popsicle sticks. Freeze for at least 3 hours before serving.
