Pink Pitaya Raspberry Chia Pudding White Chocolate Cups

With a little pink magic, it can always brighten any Monday morning! Especially when it is this gorgeous, glowing and filled with lush flavors. Incorporated our favorite ridiculously good & tasty pant-based combination: Suncore Foods® Black Chia Seeds and Suncore Foods® Pink Pitaya Powder in this delightful Pink Pitaya Raspberry Chia Pudding White Chocolate Cups. Can you get enough of that vibrant magenta color? Oooh yes! You will not regret this wonder good combo too that can be easily enjoyed for a simply good breakfast snack or dessert or a mid-afternoon snack!

Ingredients

Pink Pitaya Raspberry Chia Pudding:
1 cup raspberries fresh or frozen⁣
1 cup soy milk ⁣
3 tbsp pure maple syrup⁣
1/4 cup soy yogurt ⁣
1/4 cup Suncore Foods® Black Chia Seeds
2 tsp Suncore Foods® Pink Pitaya Powder dissolved in 2 tsp water

Pink Pitaya White Chocolate Cup: ⁣
200g dairy free white chocolate ⁣
1-2 tsp Suncore Foods® Pink Pitaya Powder

Directions

1. In a blender, combine all the ingredients except chia seeds and blend until smooth.⁣

2. Pour mixture into a bowl. Add Suncore Foods® Black Chia Seeds and stir well. Let it rest in the fridge for 1-2 hours or overnight, stirring occasionally, until it reaches a pudding-like consistency. ⁣

3. Pink Pitaya Chocolate Cup ⁣— Combine melted white chocolate and Suncore Foods® Pink Pitaya Powder. Add chocolate into a silicone mold and swirl it around so that the whole case is coated. Refrigerate until set. ⁣

4. To Assemble⁣ — Remove chocolate cups from refrigerator and carefully remove from the mold. Fill each chocolate cup with chia pudding. Refrigerate until ready to serve. ⁣
