Rainbow Banana Popsicles

With you can count with one hand, why run to the store for popsicles? So take the bananas that you're holding onto to make bread, pop a couple in the freezer to make some delicious, vegan popsicles instead! With your favorite fruits and frozen bananas, toss them into a blender until smooth, and you have yourselves some pre-popsicles! And for some extra pizazz and wow factor sprinkle in some Suncore Foods® Supercolor Powders to add rich, bright colors to your ice pops! After a quick freeze, you can enjoy the tropics anytime of the year, from anywhere in the world!

Ingredients

Cake:
Makes 10 Popsicles

4 frozen bananas
1 cup pineapple, chopped
1 cup dragon fruit, chopped
1.5 cups vanilla oat milk
2 tsp pure vanilla extract
Optional - maple syrup (if needed) to taste
1 tsp Suncore Foods® Red Beet Supercolor Powder
½ tsp Suncore Foods® Vermillion Annatto Supercolor Powder
1 tsp Suncore Foods® Pink Pitaya Supercolor Powder
1 tsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
½ tsp Suncore Foods® Aqua Blue Spirulina Supercolor Powder

Equipment Needed: Popsicle molds

 

Directions

 

1. Place all ingredients in a blender and blend until smooth and well combined. Equally divide mixture into 5 bowls and mix in 1 Supercolor into each bowl.

2. Assemble into molds – Start with any 1 Supercolor and pour or spoon a small amount into each popsicle mold. Freeze for 20 minutes to allow the mixture to lightly solidify. Refrigerate remaining bowls while the mixture is freezing.

3. Repeat this process for remaining Superoclor mixtures allowing each layer to lightly solidify before adding the next layer.

4. Freeze overnight and allow the popsicles to thaw for 2-3 minutes before removing from molds and serving.
