Pitaya Chocolate Chip Oatmeal Cookies

1 bag Suncore Foods® Pitaya Red Dragon Fruit Chips, crushed into smallish pieces
2 flax eggs (1tbsp flax meal to 2.5 tbsp water for each egg)
1/4 cup vegan butter
2 tsp vanilla extract
1/4 cup maple syrup
2 tbsp almond butter
1/4 cup coconut sugar
1/4 cup cane sugar
1 cup oat flour
1/2 cup almond flour
3/4 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
1 cup oats
3/4 cup dark chocolate chips
1. Preheat oven to 350 F.
2. Stir together flax and water and let sit for 15-20 minutes until thickened.
3. Using mixer, blend together, butter, vanilla, maple syrup, almond butter, flax eggs, coconut sugar, and cane sugar.
4. In another bowl, stir together oat flour, almond flour, cinnamon, baking powder, baking soda, and xanthan gum. Mix dry into wet ingredients.
5. Once it is well mixed, stir in oats, chocolate chips, and chopped dried pitaya. Bake for 11-13 minutes. Enjoy!
