Pink Pitaya Bliss Balls
Chocolate, pitaya, and coconut? Sounds like heaven! These Pink Pitaya Bliss Balls are bite-sized versions of sweet, pure deliciousness. Made with Suncore Foods® Pink Pitaya Supercolor Powder and Suncore Foods® Rose Salt into the inner filling sprinkled them with Suncore Foods® Superbloom Rose Petals. We want it alllll!

Make 24 bliss balls
2 cups desiccated coconut
1/4 cup almond meal
Pinch Suncore Foods® Rose Salt
2 tsp Suncore Foods® Pink Pitaya Supercolor Powder dissolved in 1 tbsp water
4 tbsp water
2 tbsp melted unrefined coconut oil
2 tbsp pure maple syrup
2 tbsp almond butter
1 tsp vanilla bean paste
180g non dairy dark chocolate to dip
Sprinkled with Suncore Foods® Superbloom Rose Petals
1. Place all the ingredients in a food processor and pulse until you get a sticky mixture. Add more water, 1 tsp at a time if it's not wet enough.
2. Shape the dough into 1 tsp-large balls and place them over a lined tray. Freeze the balls for at least 3 hours.
3. Melt chocolate over Bain-Marie or in the microwave.
4. Dip the balls into the chocolate and decorate as you like. Place in the refrigerator to set for 10 minutes.
