Ombre Pink Pitaya Heart-Shaped Panna Cotta

1 cup soy milk
1 cup canned coconut milk
3 - 4 tbsp maple syrup *adjust to taste
2 tbsp cornstarch *dissolved in 2 tbsp water
1 tsp agar agar powder
1 tsp vanilla bean extract
2 tsp Suncore Foods® Pink Pitaya Supercolor Powder
1 tsp Suncore Foods® Velvet Red Beet Supercolor Powder
1. Heat the coconut milk, soy milk in a sauce pan until it reaches a low boil. Sprinkle agar-agar, bring the mixture to a gentle simmer, stirring constantly, and heat for about 3 minutes, until the agar completely dissolved. Whisk in cornstarch, maple syrup and vanilla. Let it simmer on low for 30 secs.
2. Divide the mixture into four bowls. You will be keeping one bowl. Add pink pitaya and red beet powder, and mix well. Pour the mixture into molds and place in the refrigerator to set for 4 hours. Unmold the panna cotta, carefully invert onto a serving plate.
