Ingredients

Cerise Prickly Pear Lychee & Milk Layer:
150g soy milk
1/4 cup Lychee syrup from canned lychee
1 tsp agar agar powder
1/5 tsp Suncore Foods® Cerise Prickly Pear Powder

Pink Pitaya Jelly:
3/4 cup water
1/4 cup lychee syrup from canned lychee
1 tsp agar agar powder
1/3 tsp Suncore Foods® Pink Pitaya Powder

Fresh or Canned Lychees

Directions

1. Cerise Prickly Pear Lychee & Milk layer — Add milk to a saucepan, bring up to a boil. Add agar powder, and cook until dissolved, whisking constantly. Whisk in lychee syrup and Suncore Foods® Cerise Prickly Pear Powder continue to simmer for 1 minute. Turn off the heat.

2. Pink Pitaya Jelly — Add water to a saucepan, bring up to a boil. Add agar powder, and cook until dissolved, whisking constantly. Whisk in lychee syrup continue to simmer for 1 minute. Turn off the heat. Add Suncore Foods® Pink Pitaya Powder and mix until dissolved.

3. Cover cups with plastic wrap, pour the lychee milk mixture into the cups, let set for a few minutes, add the lychee and let this layer set at room temperature. Don't let it set solid completely or the next layer will not cling to it and will separate when you unmold. Proceed to pour the Hibiscus lychee jelly mixture. Take the edge of the plastic wrap and remove from the cup. Hang up the jelly and let it set solid completely. Transfer to the fridge for at least 2 hours before serving. Enjoy!
