Halloween Chocolate Covered Sandwich Cookies

These sweet Chocolate Covered Sandwich Cookies are spooktacular for the little monsters in your life. Delicious chocolatey goodness decorated with fangtastic hues using Suncore Foods® Blue Butterfly Pea, Midori Jade Matcha, and Purple Sweet Potato Powders is ideal for your Halloween parties and is almost too cute to eat! Sink your teeth into the Halloween spirit with these cookies and be warned: these scary yummy cookies may vanish quickly as a phantom on Halloween night!

Ingredients

Green Chocolate Coating:
150g white chocolate
1 tbsp Suncore Foods® Midori Jade Matcha Powder
Pinch of turmeric powder

Purple Chocolate Coating:
150g white chocolate
1 tbsp Suncore Foods® Purple Sweet Potato Powder
Pinch of Suncore Foods® Blue Butterfly Pea Powder

Chocolate Chip Cookies:
85g butter of choice
60g caster sugar
1 tsp vanilla extract
155g all-purpose flour
25g almond milk
12g almond flour
35g starch
17g cocoa powder
1/4 cup chocolate chips

Filling:
90g cream cheese
60g butter of choice
1 tsp vanilla extract
30g powdered sugar

Directions

1. Chocolate Coating – Dissolve Suncore Foods® Powder with 2 tbsp melted chocolate. Add mixture into remaining chocolate and mix until well combined. Set aside.

2. Chocolate Chips Cookies — In a food processor, add all cookie ingredients and pulse until a dough ball forms. Fold in chocolate chips using a spatula. Cover and refrigerate the dough for at least 10 minutes. Preheat the oven to 175c. Roll out the dough onto parchment paper. Cut out cookies using cookie cutters. Transfer to parchment-covered baking sheets. Bake for 15-16 minutes. Remove from the oven and let it fully cool before moving.

3. Filling — In a stand mixer, cream room temperature cream cheese and butter until creamy, add the sugar, and vanilla and mix until smooth.

4. Assembly — Pipe filling into each cookie and sandwich together. Place in the freezer for 30 mins. Coat cookies with melted chocolate then place on a parchment lined baking sheet. Decorate and refrigerate until set.
