Enchanted Wonderland Butterfly Pea Lemonade

Ingredients
Makes 1 Large or 2 Small Lemonades
4g Suncore Foods® Butterfly Pea Flowers
25g hot water
Ice
30 – 34g (2 tbs) simple syrup (or to taste)
24g lemon juice
80 – 100g sparkling water
Directions
1. Butterfly Pea Tea — Place Suncore Foods® Butterfly Pea Flowers in hot water and set aside for 10 minutes.
2. Add ice to a large glass or small pitcher. Strain the tea over ice and discard flowers.
3. Mix in simple syrup and lemon juice. By adding lemon juice, the colour will change from blue to pink/purple. Stir until well combined and the entire lemonade is pink or purple in color.
4. Serve as 1 large lemonade or pour into two smaller glasses. Top off with sparkling water to preference.
