Aqua Blue Spirulina White Chocolate Cake Bliss Balls

A blue Christmas meets a white Christmas with these beautifully festive cake balls. Winter blues magically turn into a cheerful blue with Suncore Foods® Aqua Blue Spirulina Powder. Deliciously coated your fluffy cake balls in a blue-tiful baby blue and winter white chocolate frosting to serve a joyful dessert that will be met with joyful hearts at your holiday party! Ingredients

Cake:
150g all purpose flour
16g cornstarch
1 tsp baking powder
1/2 tsp baking soda
75g powdered sugar, sifted
1 cup soy milk, room temperature
1/3 cup vegetable oil
1 tbsp white vinegar
2 tsp vanilla bean extract
1/4 salt

Frosting:
70g dairy free butter
150g powdered sugar
30g melted white chocolate
1 tsp vanilla extract
1/2 tsp salt

Coating:
Dairy free white chocolate
1-3 tsp Suncore Foods® Aqua Blue Spirulina Powder
Combine and mix well

Directions

1. Cake — Preheat the oven to 170c. Prepare a cake pan , set aside.
In a large bowl, sift dry ingredients and whisk to combine. Add in milk, vanilla, oil, white vinegar. And until well combined. Pour cake mixture into prepared pan. Bake for 20 minutes until toothpick comes out clean. Let cool completely before crumbling.

2. Frosting — Whip butter in the stand mixer bowl with the paddle attachment, on medium to high speed for about 2 minutes. Stop mixer and add the sifted powdered sugar. salt. Mix on low speed until incorporated, scrape the bottom and sides of the bowl and then add in vanilla and melted chocolate.

3. Crumble the cake into the bowl on top of the frosting. Turn the mixer on low and beat the frosting and cake crumbles together until combined. Roll mixture into balls. Refrigerate for 2 hours or freeze for 1 hour.

4. Coat cake balls with melted chocolate then place on a parchment lined baking sheet. Refrigerate until set.
