Colorful Rainbow Pancakes

Brighten your week with these colorful rainbow pancakes made with Suncore Foods® Pancake & Waffle Mixes — Heroic Blue Spirulina made with our Aqua Blue Spirulina Powder, Power Pink Pitaya made with our Pink Pitaya Powder, Ultra Violet made with our Purple Sweet Potato Powder & Suncore Foods® special blend, and Zen Midori Matcha made with our Midori Jade Matcha Powder. These rainbow stacks are a fun twist on traditional buttermilk pancakes. So light and fluffy! You can also make these in any color combination you like! Go ahead and whip up delicious pink, blue, purple and green pancakes, there's no doubt this festive stack will put a smile on your family's face in the morning.

Ingredients

Vanilla Power Pink Pitaya Pancakes:
½ cup Suncore Foods® Powder Pink Pitaya Pancake& Waffle Mix
½ cup vanilla oat milk
½ tsp pure vanilla extract

Coconut Heroic Blue Spirulina Pancakes:
½ cup Suncore Foods® Heroic Blue Spirulina Pancake & Waffle Mix
½ cup + 2 tbs plant-milk (or water)
2 tsp coconut cream

Lemon Zen Midori Matcha Pancakes:
½ cup Suncore Foods® Zen Midori Matcha Pancake & Waffle Mix
½ cup plant-milk (or water)
¾ tsp lemon zest

Passion Fruit Cream Sauce:
½ cup coconut cream
1 tbs Suncore Foods® Marigold Passion Fruit Powder & Seeds
¾ cup plant-milk
½ cup fresh mango

 

Directions

1. Pancakes — For each Suncore Foods® Pancake & Waffle Mix, combine all ingredients and continue to cook by following package instructions. When ready, assemble rainbow pancakes into a stack and serve hot with passion fruit cream sauce and/or maple syrup.

2. Passion Fruit Cream Sauce — Blend all ingredients until smooth and well combined. Add some more milk if you prefer the sauce to be thinner. Serve with pancakes.
