Blackberry & Maqui Berry Chia Pudding in Chocolate Cups

These Blackberry & Maqui Berry Chia Pudding in Chocolate Cups are filled with Suncore Foods® Black Chia Seed pudding and punched up with Suncore Foods® Ebony Carrot & Indigo Blueberry Powders. 1 cup blackberries fresh or frozen
1 cup soy milk
3 tbsp pure maple syrup
1/4 cup soy yogurt
2 tsp Suncore Foods® Indigo Blueberry Powder dissolved in 1 tsp water
1/4 Suncore Foods® Black Chia Seeds
Purple Chocolate Cup:
200g dairy free white chocolate
1-2 tsp Suncore Foods® Purple Sweet Potato Powder
1/5 Suncore Foods® Ebony Carrot Powder
1. In a blender, combine all the ingredients except Suncore Foods® Black Chia Seeds and blend until smooth.
2. Pour mixture into a bowl. Add Suncore Foods® Black Chia Seeds and stir well. Let it rest in the fridge for 1-2 hours or overnight, stirring occasionally, until it reaches a pudding-like consistency.
3. Chocolate Cup — Combine melted white chocolate and Suncore Foods® Purple Sweet Potato Powder & Suncore Foods® Ebony Carrot Powder. Add chocolate into a silicone mold and swirl it around so that the whole case is coated. Refrigerate until set.
4. To Assemble — Remove chocolate cups from refrigerator and carefully remove from the mold. Fill each chocolate cup with chia pudding, top with blackberries and serve.
