Blackberry & Maqui Berry Chia Pudding in Chocolate Cups

These Blackberry & Maqui Berry Chia Pudding in Chocolate Cups are filled with Suncore Foods® Organic Chia Seed pudding and punched up with Suncore Foods® Rhodolite Maqui Berry Supercolor Powder. 1 cup blackberries fresh or frozen
1 cup soy milk
3 tbsp pure maple syrup
1/4 cup soy yogurt
1 tsp Suncore Foods® Rhodolite Maqui Berry Supercolor Powder (dissolved in 1 tsp water)
1/4 Suncore Foods® Organic Chia Seeds
For the White Chocolate Cup:
200g dairy free white chocolate
1-2 tsp Suncore Foods® Purple Sweet Potato Supercolor Powder
1. In a blender, combine all the ingredients except chia seeds and blend until smooth.
2. Pour mixture into a bowl. Add chia seeds and stir well. Let it rest in the fridge for 1-2 hours or overnight, stirring occasionally, until it reaches a pudding-like consistency.
3. Chocolate Cup — Combine melted white chocolate and Suncore Foods® Purple Sweet Potato powder. Add chocolate into a silicone mold and swirl it around so that the whole case is coated. Refrigerate until set.
4. To Assemble — Remove chocolate cups from refrigerator and carefully remove from the mold. Fill each chocolate cup with chia pudding, top with blackberries and serve.
