Blackberry & Maqui Berry Chia Pudding in Chocolate Cups

Step aside chocolate peanut butter cups, these babies are taking over! These Blackberry & Maqui Berry Chia Pudding in Chocolate Cups are filled with Suncore Foods® Organic Chia Seed pudding and punched up with Suncore Foods® Rhodolite Maqui Berry Supercolor Powder. Talk about a good fat dessert! The beautifully rich purple hues and jewel tones come from Suncore Foods® Purple Sweet Potato Supercolor and Rhodolite Maqui Berry Supercolor Powder, and they will surely make you feel like you’re eating a treat fit for royalty!

Ingredients

Chia Pudding:
1 cup blackberries fresh or frozen⁣
1 cup soy milk ⁣
3 tbsp pure maple syrup⁣
1/4 cup soy yogurt ⁣
1 tsp Suncore Foods® Rhodolite Maqui Berry Supercolor Powder (dissolved in 1 tsp water) ⁣
1/4 Suncore Foods® Organic Chia Seeds

For the White Chocolate Cup: ⁣
200g dairy free white chocolate ⁣
1-2 tsp Suncore Foods® Purple Sweet Potato Supercolor Powder

 

Directions

1. In a blender, combine all the ingredients except chia seeds and blend until smooth.⁣

2. Pour mixture into a bowl. Add chia seeds and stir well. Let it rest in the fridge for 1-2 hours or overnight, stirring occasionally, until it reaches a pudding-like consistency. ⁣

3. Chocolate Cup ⁣— Combine melted white chocolate and Suncore Foods® Purple Sweet Potato powder. Add chocolate into a silicone mold and swirl it around so that the whole case is coated. Refrigerate until set. ⁣

4. To Assemble⁣ — Remove chocolate cups from refrigerator and carefully remove from the mold. Fill each chocolate cup with chia pudding, top with blackberries and serve. ⁣
