Ingredients

⁣Cookies⁣:
110g dairy free butter ⁣
1/2 cup (100g) sugar ⁣
1 tsp vanilla extract ⁣
1 3/4 cup (210g) flour
1/4 cup (37g) cornstarch
1/4 tsp Suncore Foods® Rose Salt
2-3 tbsp dairy free milk ⁣

Icing: ⁣
2 tbsp aquafaba⁣
1/4 tsp cream of tartar ⁣
1 tsp vanilla extract ⁣
1 1/2 to 2 cups sifted powdered sugar ⁣
Pinch of Suncore Foods® Aqua Blue Spirulina Supercolor Powder for the color ⁣


Directions

1. In a stand mixer cream the butter, sugar and vanilla together for 1 min. Add in your flour and cornstarch.⁣

2. The dough will look dry, just keep mixing, and it will come together. If it is too dry, add a tsp of milk. If it is too wet, add more flour. ⁣

3. Cover dough with plastic wrap and chill in the fridge for 15 minutes. Preheat oven to 170c. Prepare a baking tray with parchment paper. ⁣Lightly flour work surface and rolling pin. ⁣

4. Roll dough out onto a piece of parchment paper to about 1/4-inch thickness and cut out the dough using a cookie cutter. Bake for 9-10 minutes. Allow the cookies to cool on the pan for 5 minutes before transferring to a wire cooling rack. ⁣

5. Make the icing ⁣— In a stand mixer, beat aquafaba with cream of tartar and salt until foamy. Add all powdered sugar and beat on low speed until thick. Beat in supercolor powder and beat until thickened. Thin the icing with lemon juice to the desired consistency. ⁣

6. Decorate cookie pieces with royal icing. Let dry completely. ⁣
