Turquoise Breakfast Chia & Jelly Parfaits

Chase your Monday blues away with this vibrant Turquoise Breakfast Chia & Jelly Parfaits. A tasty way to start your morning with breakfast made with Suncore Foods® Black Chia Seeds and the color of this bright blue hue is spectacular from Suncore Foods® Aqua Blue Spirulina Powder. Wonderful, delightful & delicious. Gotta love it.

Ingredients

Makes 3-4 Parfaits

Turquoise Pineapple Chia Pudding:
1 cup fresh pineapple (cut into cubes)
1/4 cup water
1/4 cup Suncore Foods® Black Chia Seeds
1/2 cup milk
1/4 tsp Suncore Foods® Aqua Blue Spirulina Powder

White Chia Pudding:
1 1/4 cup almond milk
1/4 cup Suncore Foods® Black Chia Seeds
1 -2 tbsp sweetener of choice

Blue Pineapple Coconut Jelly:
3/4 cup coconut milk
1/2 cup pineapple juice (strained) (1/2 cup pineapple + 1 tbsp water)
2 tbsp sugar
1 tsp agar agar
1/2 tsp Suncore Foods® Aqua Blue Spirulina Powder
1/4 tsp salt

White Coconut Jelly Layer:
1 cup coconut milk
1/2 tsp salt
1/2 tsp sugar
1/2 tsp agar agar powder

 

Directions

1. Turquoise Pineapple Chia Pudding — Blend pineapple along with water until very smooth. Strain the mixture directly to a mason jar. Add in all other ingredients; mix until well combined. Place the jar in the chiller overnight or at least 2-3 hours before using.

2. White Chia Pudding — Place all ingredients in a mason jar, stir to combine well. Place it in the chiller for couple of hours until chia seeds expand.

3. Blue Pineapple Coconut Jelly — Place all ingredients in a small saucepan, cook on medium low heat until sugar and agar agar have completely dissolved (about 5 mins). Bring the mixture to a boil for 1 minute. Remove from heat. Strain the mixture. Divide mixture equally to 4-5 jars. Let them set in the chiller for at least 10 minutes before making the next layer.

4. White Coconut Jelly Layer — Place all ingredients in a small saucepan. Cook mixture on low heat until agar agar and sugar are completely dissolved. Bring the mixture to a boil for 1 minute. Remove from heat (make sure to stir constantly). Pour mixture directly over turquoise jelly layer. Let them set in the chiller for 10-15 minutes before assembling with chia pudding. Enjoy!
