Supercolor Chocolate Truffles

¾ cup almond butter
½ cup maple syrup
1 tsp vanilla extract
½ tsp cinnamon powder
⅛ tsp sea salt
4 tbsp water
⅓ cup melted cacao butter
⅓ cup cacao powder

For topping:
Suncore Foods® Pink Pitaya Supercolor Powder
Suncore Foods® Emerald Pandan Supercolor Powder
Suncore Foods® Blue Butterfly Pea Supercolor Powder
Suncore Foods® Yellow Goldenberry Supercolor Powder


1. Blend almond butter, maple syrup, vanilla, cinnamon, sea salt, and water in high speed blender until smooth.

2. Add melted cacao butter slowly and blend until well mixed. Add cacao powder and blend. You will need to stop 1 or 2 times and push the mixture down using a spatula.

3. Once blended together, pour into a small pan and let firm up in the refrigerator. Once the mixture hardens, roll into equally sized balls (we use a small cookie scoop to ensure even sizing) and dust with Suncore Foods® Supercolor Powders.
