Rose Tea Poached Pears with Coconut Yogurt

3-4 pears, peeled and sliced in half (seeds removed)
3 bottles your choice of tea
½ cup sugar
1 tsp vanilla extract
½ cup vegan vanilla yogurt
¼ cup Suncore Foods® Toasted Coconut Chips
For serving: Suncore Foods® Fig Chips + Suncore Foods® Rose Petals
1. Add tea, sugar and vanilla extract to a saucepan over medium heat. Bring to a simmer, then add the peeled, halved pears in a single layer. Simmer for 20-30 minutes, until pears are tender and fragrant. Let cool in liquid.
2. Stir together yogurt and toasted coconut. Spread onto a plate or shallow bowl, top with poached pears, rose petals and fig chips. Optional: top with more poaching liquid.
