Raspberry Beet Pink Pitaya Chia Parfait

Get the best of both worlds with these playful, cherry pink Raspberry Beet Pink Pitaya Chia Parfaits—a powerhouse of chia and pink. A scrumptious staple on our breakfast table and perfect for anytime any day snack too! Incorporated Suncore Foods® Pink Pitaya and Red Beet Powders to achieve the dreamy magenta color combined with Suncore Foods® Black & White Chia Seeds. We think this delicious creation is the best way to start your mornings and so delicious and it doubles as breakfast or dessert!

Ingredients

Makes 3-4 Parfaits

Pink Chia Pudding:
1/4 cup Suncore Foods® White Chia Seeds
1 1/4 cup almond milk
1/2 tsp Suncore Foods® Red Beet Powder
1 tsp Suncore Foods® Pink Pitaya Powder
Sweetener of choice

White Chia Layer:
1/4 cup Suncore Foods® Black Chia Seeds
1 1/4 cup almond milk
Sweetener of choice

Red Jelly Layer:
1 cup frozen raspberry
1/2 cup water
2 tbsp sugar (or more)
1/4 tsp Suncore Foods® Red Beet Powder
1 tsp agar agar powder
Juice of half a lemon

Pink Jelly Layer:
1 cup almond milk
1 tsp agar agar powder
1 tsp Suncore Foods® Pink Pitaya Powder
Sugar to taste

Directions

1. Pink Chia pudding — Mix all ingredients in a mason jar until well incorporated. Place the jar in the chiller for 3-4 hours before using.

2. White Chia Layer — Mix all ingredients in a mason jar until well incorporated. Place the jar in the chiller for 3-4 hours before using

3. Red Jelly Layer — Place all ingredients in a small saucepan; cook on medium low heat for about 6-7 mins. Press berries to the side of the pan to release the juice. Divide mixture equally to prepared glasses. Let them cool and set in the chiller for 10 minutes before making the next layer.

4. Pink Jelly Layer — Place all ingredients in a small saucepan; cook on medium low heat for about 3-4 mins. Pour mixture directly onto raspberry jelly later. Let it chill in the fridge for 10 minutes before adding the chia pudding. Top the parfaits with fresh fruits and more jelly. Enjoy!
