Rainbow Chia Seed Pudding Parfaits
A great go-to snack to keep in the fridge that is fun and looks like a rainbow but packed with all the delicious that are good & simple! Who knew breakfast could be as much fun as these pretty Rainbow Chia Seed Pudding Parfaits?! All the colors are beautiful and plant derived.
Ingredients
Chia Seed Pudding:
1/3 cup Suncore Foods® Black Chia Seeds
1 cups plant-based milk of choice
½ cup yogurt of choice
2 tsp Suncore Foods® Lilac Taro Powder
1 tsp Suncore Foods® Red Beet Powder
2 tsp vanilla extract
2 tbsp maple syrup
Topping:
¼ cup yogurt of choice
¼ cup fruit
Directions
1. Add all ingredients except chia seeds to a bowl and whisk to combine. Then evenly divide it into two bowls for Suncore Foods® Lilac Taro Powder & Suncore Foods® Red Beet Powder.
2. Add Suncore Foods® Black Chia Seeds to each bowl and whisk to combine. Leave in the fridge for 3 hours or overnight.
3. Spoon into individual serving dish. Add your desired yogurt and toppings.
