Rainbow Sequilhos
Taking sweetness to a whole new level with these buttery, delicate, and oh-so-easy, much-beloved vibrant Rainbow Sequilhos. These melt-in-your-mouth cookies are made from just a handful of and colored magically using Suncore Foods® Powders (Midori Jade Matcha, Pink Pitaya, Purple Sweet Potato, and Red Beet). Ingredients
2 oz powdered sugar
4 oz butter, room temperature
1 egg yolk
6 oz all purpose flour
150g heaven cream
50g cream cheese, room temperature
50g sugar
1 tbsp Suncore Foods® Aqua Blue Spirulina Powder
1 tbsp Suncore Foods® Midori Jade Matcha Powder
1 tbsp Suncore Foods® Pink Pitaya Powder
1 tbsp Suncore Foods® Purple Sweet Potato Powder
1 tbsp Suncore Foods® Red Beet Powder
Directions
1. Preheat the oven to 350 F
2. Cream together powdered sugar and butter. Stir in egg yolk.
3, Mix in flour. Divide dough into 4 equal portions. Color one red using Suncore Foods® Red Beet Powder. Purple with Suncore Foods® Purple Sweet Potato Powder. Green with Suncore Foods® Midori Jade Matcha Powder. Pink with Suncore Foods® Pink Pitaya Powder. Wrap dough discs in plastic and chill for 30 minutes.
4. Roll all discs to 1/4" thickness. Cut a 6" circle out of each dough.
5. Bake between 2 silicone mats for 10-12 minutes.
6. Cool completely.
7. Whip heavy cream until soft peaks have formed. Separately, mix together the cream cheese and sugar. Fold whipped cream into cream cheese. Transfer to a piping bag fitted with a round piping tip.
8. Stack red, purple, green, and pink cookie discs by piping dollops of cream between them, and finish with dollops of cream on top. Decorate top with berries and sprinkles.
