Rainbow Goji Berry Red Beet Salad

Happy New Years! Say goodbye to 2019, and wave hello to 2019. We're springing into the new year with bright smiles and colorful bowls, like this New Year New You Rainbow Goji Berry Red Beet Salad! Topped with Suncore Foods® Red Goji Berries to the base and Suncore Foods® Red Beet Supercolor Powder Rose Salt into the vinaigrette. This year is sure to be amaze-bowls!

Salad mixture:
1 container of baby kale
4-5 radicchio leaves sliced and chopped
1/3 cup chopped pecans
1/4 cup Suncore Foods® Red Goji Berries
1/4 cup pomegranate seeds
1 large orange supreme cut
1-2 blood oranges supreme cut
Salt and pepper

Red beet vinaigrette:
1/3 cup extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp maple syrup
1-1/2 tsp Suncore Foods® Red Beet Supercolor Powder
1/4 tsp Suncore Foods® Rose Salt
Few cracks black pepper


1. Pour half of the dressing over the kale and radicchio leaves and massage gently. Add the rest of the ingredients and the rest of the dressing and stir well. Taste and season with salt and pepper if needed. Serve immediately once it has the dressing on it.

2. Whisk together ingredients until beetroot powder is well incorporated.
