Rainbow Crepe Roll-Ups

Roll into the weekend with a burst of color and fun! These delightful Rainbow Crepe Roll-Ups are not just a feast for the eyes, but also a treat for your taste buds! Made vibrant with Suncore Foods® Powders—Aqua Blue Spirulina, Blue Butterfly Pea, Cerise Prickly Pear, Midori Jade Matcha, Purple Sweet Potato, Red Beet, and Ruby Red Radish—each crepe is a little surprise waiting to brighten your day. Imagine the fun you'll have creating these beautifully colored treats that promise happiness in every bite! Let’s get rolling into deliciousness together!

Ingredients

200g lightly beaten egg (about 2 eggs)
60g sugar
340g flour
4 cups whole milk
Zest of one orange
100g butter, melted and cooled
2 tbsp (30 ml) oil for the pan
1/2 tbsp Suncore Foods® Aqua Blue Spirulina Powder
2 tsp Suncore Foods® Blue Butterfly Pea Powder
1 tbsp Suncore Foods® Cerise Prickly Pear Powder
1/2 tbsp Suncore Foods® Midori Jade Matcha Powder
1/2 tbsp Suncore Foods® Purple Sweet Potato Powder
1 tsp Suncore Foods® Red Beet Powder
1/2 tsp Suncore Foods® Ruby Red Radish Powder
Sweet vanilla cream
1 cup heavy cream
1 tbsp powdered sugar
1 tsp vanilla

Directions

1.Whisk eggs, sugar and flour with 1/3 of the milk until a firm smooth batter forms. Whisk in the rest of the milk slowly.

2. Whisk in orange zest and melted butter

3. Let batter rest for 2 hours in the fridge

4. Divide the batter 7 ways

5. Whisk the following colors into each of the 6 divided batters
Light Blue — 1/2 tbsp Suncore Foods® Aqua Blue Spirulina Powder
Blue — 2 tsp Suncore Foods® Blue Butterfly Pea Powder
Pink — 1 tbsp Suncore Foods® Cerise Prickly Pear Powder
Green — 1/2 tbsp Suncore Foods® Midori Jade Matcha Powder
Purple — 1/2 tbsp Suncore Foods® Purple Sweet Potato Powder
Red — 1 tsp Suncore Foods® Red Beet Powder & 1/2 tsp Suncore Foods® Ruby Red Radish Powder

6. Reserve some plain batter to practice with

7. Lightly oil a large frying pan or  crepe pan, on medium high heat. Ladle in enough batter to cover the bottom of the pan. When the crepe is lightly browned on the bottom flip. Once cooked let cool on a plate

8. For the whipped cream mix cream, sugar and vanilla and use a hand mixer to whip until stiff peaks form Spread over the whole crepe, you can add berries inside, tuck in ends and roll up, serve warm and topped with powdered sugar.
