Makes 8 x 4 Small Donuts:
Below ingredients are for 8 small donuts along with 1 color. Multiply ingredients by 4 to use all Suncore Foods® Powders for Rainbow Donuts.
Supercolor Baked Donuts:
1 cup gluten-free flour
½ cup powdered sugar
1 tsp baking powder
¼ tsp baking soda
1 tsp lemon zest
1 tbsp lemon juice
2 tbsp dairy-free yogurt
½ cup + 2 tbsp oat milk
1 tsp pure vanilla extract
1 tbsp butter, softened
Green - 2 tsp Suncore Foods® Midori Jade Matcha Powder
Blue - 1 tsp Suncore Foods® Blue Butterfly Pea Powder
Pink - 2 tsp Suncore Foods® Red Beet Powder
Purple – 1 tsp Suncore Foods® Red Beet Powder + 1 tsp Suncore Foods® Ruby Red Radish Powder
½ cup vanilla oat milk
2 tbs coconut cream (optional)
4 cups powdered sugar
Green – ½ tsp Suncore Foods® Midori Jade Matcha Powder
Blue – ½ tsp Suncore Foods® Aqua Blue Spirulina Powder
Pink – ½ tsp Suncore Foods® Red Beet Powder
Purple – ¾ tsp Suncore Foods® Purple Sweet Potato Powder
1. Rainbow Baked Donuts — Preheat oven to 350 deg. F and prepare a baking tray. In a large bowl, combine flour, sugar, baking powder, baking soda, lemon zest and 1 Suncore Foods® Powder. In another bowl, mix remaining ingredients until smooth. Add wet ingredients to the bowl of dry ingredients and mix until well combined. Spoon or pipe mixture into donut cavities and bake for 16 minutes. Allow donuts to cool completely before adding the glaze.
2. Supercolor Glaze — Combine milk and coconut cream (if using) in a saucepan on low heat. Mix in sugar, stir until well combined and the consistency of the glaze is to your preference. Equally divide glaze into 4 bowls and mix in 1 color into each bowl. Dunk donuts into glaze and place them on a wire rack.
