Rainbow Baked Donuts

Everyone loves a friend, co-worker, or parent who brings a box of assorted donuts to the party, office, or breakfast. What’s more to love are tender and soft baked donuts that satisfy any donut craving or enthusiast with less fat and guilt! Not only are baked donuts a better alternative to the traditional fried donut health wise but they are way quicker and easier to make! No added mess or hassle of having to bust out the oil and fryer. In under a half hour, you could have a fan favorite breakfast spread ready and beaming with beautiful colors to start any day brighter! Incorporate Suncore Foods® Supercolor Powders to make any color under the sun. Blue Butterfly Pea, Green Midori Jade, Purple Sweet Potato, Velvet Red Beet…you name it!


Makes 8 x 4 Small Donuts:
Below ingredients are for 8 small donuts along with 1 Supercolor. Multiply ingredients by 4 to use all Supercolors for Rainbow Donuts.

Supercolor Baked Donuts:
1 cup gluten-free flour
½ cup powdered sugar
1 tsp baking powder
¼ tsp baking soda
1 tsp lemon zest
1 tbs lemon juice
2 tbs dairy-free yogurt
½ cup + 2 tbs oat milk
1 tsp pure vanilla extract
1 tbs butter, softened
Green - 2 tsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
Blue - 1 tsp Suncore Foods® Blue Butterfly Pea Supercolor Powder
Pink - 2 tsp Suncore Foods® Velvet Red Beet Supercolor Powder
Purple – 1 tsp Suncore Foods® Velvet Red Beet Supercolor Powder + 1 tsp Suncore Foods® Ruby Red Radish Supercolor Powder

Supercolor Glaze:
½ cup vanilla oat milk
2 tbs coconut cream (optional)
4 cups powdered sugar
Green – ½ tsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
Blue – ½ tsp Suncore Foods® Aqua Blue Spirulina Supercolor Powder
Pink – ½ tsp Suncore Foods® Velvet Red Beet Supercolor Powder
Purple – ¾ tsp Suncore Foods® Purple Sweet Potato Supercolor Powder



1. Supercolor Baked Donuts — Preheat over to 350 deg. F and prepare a baking tray. In a large bowl, combine flour, sugar, baking powder, baking soda, lemon zest and 1 Supercolor. In another bowl, mix remaining ingredients until smooth. Add wet ingredients to the bowl of dry ingredients and mix until well combined. Spoon or pipe mixture into donut cavities and bake for 16 minutes. Allow donuts to cool completely before adding the glaze.

2. Supercolor Glaze — Combine milk and coconut cream (if using) in a saucepan on low heat. Mix in sugar, stir until well combined and the consistency of the glaze is to your preference. Equally divide glaze into 4 bowls and mix in 1 Supercolor into each bowl. Dunk donuts into glaze and place them on a wire rack.
