Purple Sweet Potato Swirl Bread
This is how we like to roll into the weekend! Super fluffy & light – who wants to join us and have a slice of this Purple Sweet Potato Swirl Bread? Made from Suncore Foods® Purple Sweet Potato Powder to give both its gorgeous purple color and delicious flavor.
250g bread flour
4g instant yeast
25g granulated sugar
165g soy milk, lukewarm
25g vegan butter
20g Suncore Foods® Purple Sweet Potato Powder
1. In a large bowl, combine the flour, yeast, sugar, salt, and milk. Knead until smooth; about 10 minutes by hand, then add in the butter and continue kneading into a smooth dough. Form the dough into a ball and place in a covered bowl to rise for 1 hour, or until doubled in volume.
2. Once risen, divide the dough into 2 equal parts. To one piece, knead in the Suncore Foods® Purple Sweet Potato Powder (1 tsp at a time) until the color is evenly distributed. Let the dough rest again for 15 minutes, then roll each piece into a 0.5cm-thick rectangle. Lay the purple dough on top of the plain dough, then roll the aligned pieces into a tight log. Place into a greased loaf tin to rise for 30 minutes, then bake at 350F/180C for 35-40 minutes, until the top is golden brown. Let cool completely before slicing & enjoy!
