Purple Sweet Potato Sandwich Cookies

Ingredients
Cookies:
2 cups or 240g all purpose flour
2 tbsp or 16g Suncore Foods® Purple Sweet Potato Powder
100g dairy free butter
1/2 cup or 65g sugar of choice
3 tbsp or 42g dairy free milk of choice
1 tsp vanilla extract
1/4 tsp salt
1/2 tbsp or 4g Suncore Foods® Ebony Carrot Powder
Vanilla Cream Filling:
1/4 cup or 58g vegan margarine
1 cup or 120-140g powdered sugar
1 tbsp coconut milk
2 tsp vanilla extract
Pinch of salt
Directions
1. Cookies – In a large bowl cream together sugar and butter. Add in flour, Suncore Foods® Ebony Carrot Powder and Suncore Foods® Purple Sweet Potato Powder, milk, vanilla, salt and mix until well combined. Wrap cookie dough with cling wrap and refrigerate for 20 mins. Preheat oven to 170c. Lightly flour work surface and rolling pin. Roll dough out onto a piece of parchment paper to about 1/4-inch thickness and cut out the dough using a cookie cutter. Bake cookies for 12-15 minutes. Allow cookies to cool completely.
2. Vanilla Cream Filling – Beat together filling ingredients. The mixture will seem very dry at first, but will eventually begin to clump together. Add a tsp of coconut milk if needed, beating until smooth and spreadable. Spread or pipe the cream filling on the bottoms of half of the cookies; top with remaining cookies.
