Purple Sweet Potato Oat Milk Chia Pudding

Upgrade your chia pudding game with this Purple Sweet Potato Oat Milk Chia Pudding made with Suncore Foods®️ Purple Sweet Potato Supercolor Powder for the magical royal purple color. A perfect on-the-go healthy and delicious breakfast or dessert!

Purple sweet potato oat milk:
2 tbsp Suncore Foods® Purple Sweet Potato Supercolor Powder
1 cup rolled oats (gluten free or regular)
3 1/2 cups water
2 tbsp maple syrup
1/4 tsp Suncore Foods® Rose Salt 

Chia pudding:
3 tbsp chia pudding
1 cup purple sweet potato milk
2 tbsp maple syrup, optional
1-2 tsp Suncore Foods® Purple Sweet Potato Supercolor Powder for the color if desired

1 cup blueberries
1 cup yogurt of choice


1. In a large mixing bowl, combine almond flour, all purpose flour, cornstarch, coconut sugar, baking powder, salt, spices and orange zest.

2. Dissolve orange carrot powder in plant-based milk. Whisk in coconut oil, orange juice. Then pour wet ingredients to dry. Gently mix until just combined. Refrigerate the batter at least 20 minutes or until batter is thicken.

3. Brush Madeleine pan with melted vegan margarine. Scoop batter into moulds using a mini ice cream scoop. Bake at 180º preheated oven for 20-25 minutes until edges begin to become a little golden. Enjoy!
