Pink Pitaya Coconut Layered Jelly

Jiggling, wiggling to happiness with every bite! This refreshing, delicious Pink Pitaya Coconut Layered Jelly is perfect on a summery night. Take a bite, feel the creamy coconut & sweetness melt in your mouth, and top it off with some fresh, delicious dragon fruit! Mmmmmmm, it's just PERFECTION! We eye with our eyes first, so why not color it a dreamy, sweet pink hue with Suncore Foods® Pink Pitaya Supercolor Powder. Summer is not complete without jello to say hello! 

Ingredients

Makes 5 Inches Jelly Cake:
180g coconut milk
2 tbsp maple syrup or sugar of choice
1 tsp agar agar powder
180g water
2 tbsp maple syrup or sugar of choice
1 tbsp Suncore Foods® Pink Pitaya Supercolor Powder
1 tsp agar agar powder


Directions

1. Add the water, sugar, pink pitaya powder into a saucepan over a medium heat. Then add in agar and whisk until agar is completely dissolved. Stirring constantly. Let it simmer on low for 30 secs. Remove from heat and let cool slightly.⁣ Repeat this process with coconut milk.

2. Gently pour about 45g of the pitaya mixture into the dish and let this layer set at room temperature. Don't let it set solid completely or the next layer will not cling to it and will separate when you cut the cake later. Proceed to pour the 45g coconut mixture over the pitaya mixture, Repeat this process until you run out of both pitaya and coconut mixture. *Stir each mixture before pouring
