Pink Pitaya Chia Pudding Parfait

For the toppings:
1 cup soy yogurt
½ cup granola
1. In a lidded container, add milk, maple syrup, vanilla, pink pitaya powder, and chia seeds.
2. Shake vigorously to mix thoroughly. Allow to sit for 10 minutes, shake jar again so the chia seeds don't stick together.
3. Allow to set at least 1 hour before serving or leave overnight to be enjoyed the next day.
4. Top with yogurt, granola, and pomegranates and enjoy!
