Pink Pitaya Cashew Milk Chia Pudding with Coconut Yogurt
We are in LOVE with anything that contains chia seeds, whether it's savory or sweet! This Pink Pitaya Cashew Milk Chia Pudding with Coconut Yogurt is pretty in pink, inside out! 1 cup cashew milk
1/4 cup Suncore Foods® Black Chia Seeds or Suncore Foods® White Chia Seeds
2 tbsp maple syrup
1 tbsp Suncore Foods® Pink Pitaya Supercolor Powder (dissolved in 2 tbsp of water)
1 tsp vanilla extract
1/4 cup coconut yogurt
Toppings – 1 cup Coconut yogurt, Red currants, dragon fruit, Suncore Foods® Superbloom Rose Blossoms or Suncore Foods® Superbloom Rose Petals
1. Place all chia seeds, maple syrup, vanilla, cashew milk, dissolved pink pitaya in a jar. Cover tightly with lid and shake to combine. Let it rest in the fridge for 1-2 hours or overnight, stirring occasionally, until it reaches a pudding-like consistency.
2. To assemble – Stir in 1/4 cup yogurt to the chia pudding until combined. Add the chia pudding to the jars. Top with more coconut yogurt. Serve with fresh berries and enjoy!
