Matcha Mint Cacao Nib Ice Cream

Get the best of both worlds with the perfect flavor combo of Matcha and chocolate! This delectable Matcha Mint Cacao Nib Ice Cream will have you saying ice dream! This recipe calls for a dash of Suncore FoodsⓇ Premium Midori Jade Matcha Supercolor Powder, Cacao Nibs, and Rose Salt. It's always a good time for ice cream so you'll definitely want two scoops...or maybe 3!

2 cans full fat coconut milk
⅓ cup maple syrup
½ tbsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder (dissolved in 1 tbsp water)
½ cup condensed coconut milk
1 tsp peppermint extract
¼ tsp Suncore Foods® Rose Salt

1. Place the butterfly pea flowers/black goji berries in a measuring cup and add boiling water. Let it sit for 10 mins. Use a spoon to press the flowers against the bottom of the cup so they release more color. Discard the flowers once the color is vivid enough. Allow tea to cool completely.

4. Fill glasses with ice, pour in the butterfly pea flower/black goji berry tea about a half of the way for each glass. Add almond milk creamer and enjoy right away.
