Lemon Curd Chia Pot with Pink Velvety Chia Pudding Topped with Toasted Coconut Chips

Who knew breakfast could be as much fun as this pretty vegan, gluten free and protein packed with Suncore Foods® superfoods beautiful chia dessert?! It's like a unicorn breakfast perfect for healthy option to start the day or go-to snack or dessert.  If you are looking for something special anytime during the day, then this fun & healthy rainbow will be a bright addition to make. Ingredients

Chia Pudding:
1/4 cup Suncore Foods® Chia Seeds
1 1/4 cup unsweetened soy milk
1 tbsp sweetener of choice
1/2 Suncore Foods® Red Beet Supercolor Powder

Lemon Curd:
3-4 tbsp freshly squeezed lemon juice (strained)
1/3 cup water
2 tbsp sugar (adjust to taste)
1 tsp agar agar powder
Pinch of Suncore Foods® Turmeric Powder
Pour mixture directly to pots. Let them set in the fridge for an hour.

Toppings:
Suncore Foods® Toasted Coconut Chips

Directions

1. Chia Pudding – Place all ingredients in a mason jar, stir to combine well. Place it in the chiller for couple of hours before using. Before assembling; reserve 1/2 cup chia pudding, stir in 1/2 tsp red beet powder.

2. Lemon Curd — Place all ingredients in a small saucepan, cook mixture on medium low heat until sugar and agar agar are completely dissolved.

3. To Assemble — Once the jelly layer is set; gently place white chia layer followed by red beet chia. Add more milk and coconut chips before serving. Enjoy!
