Googly Eye Rainbow Cupcakes

Who said Halloween-inspired foods have to be dark and moody? These adorable, ghost cupcakes are a fun, new take on the traditional, spooky specters. Add some color and personality to your little ghosts with Suncore Foods® Supercolor Powders and a couple of googly eye candies. What's fantastic is that these cupcakes take minutes to whip up together, and are even easier to decorate! Great for a last-minute Halloween dessert and easy enough for little witches and storm troopers to help make. So surprise your little ghouls and goblins with a bright and cheerful, lemony soft Halloween treat!


Makes 10-12 Cupcakes

Cupcake Ingredients:
2/3 cup vanilla oat milk
2 tbs flaxseed meal
1.25 cups gluten-free 1-to-1 flour
¼ tsp baking soda
1.5 tsp gluten-free baking powder
½ tsp Suncore Foods® Rose Salt
1/3 cup dairy-free butter, at room temperature
2/3 cups granulated sugar
1 tsp pure vanilla extract
Zest of 1 lemon
1 tbs lemon juice

Cream Cheese Frosting Ingredients:
2 tbs dairy-free butter
1 packed cup vegan cream cheese
1 tsp pure vanilla extract
½ tsp cream of tartar
3.5 – 4 cups powdered sugar
1.25 tsp Suncore Foods® Cerise Prickly Pear Supercolor Powder
1-1.5 tsp Suncore Foods® Marigold Passion Fruit Supercolor Powder & Seeds
Pinch turmeric (optional)

Optional items needed for Ghost Icing:
Googly eyes
1A piping tip



1. Cupcakes — Preheat oven to 335 deg. F and line a cupcake pan with cupcake liners. In a jar, combine vanilla oat milk and flaxseed meal, set aside for 5-10 minutes, stirring every 2 minutes. In a medium bowl, combine flour, baking soda, baking powder and Rose Salt. Set aside. In a large bowl, cream together butter and sugar until combined and fluffy. Add vanilla extract, lemon zest and lemon juice. Mix in flaxseed meal + milk mixture until smooth. Lastly, mix in dry ingredients until well combined. Spoon batter into cupcake liners, filling 2/3 of each liner. Bake for 25 minutes or until the cupcakes pass the toothpick test. Allow cupcakes to cool down completely before adding the frosting.

2. Frosting — Beat together butter and cream cheese until fluffy. Mix in vanilla extract until well combined. Add cream of tartar + sugar, adding 1 cup of sugar at a time. For a thicker consistency, add more sugar, for a lighter consistency reduce the amount of sugar or add some oat milk, 1 tbs at a time. Equally divide frosting into 3 bowls and set aside one bowl. Mix Cerise Prickly Pear Supercolor Powder to one bowl until well combined. Mix in Marigold Passion Fruit Supercolor Powder & Seeds + turmeric to the remaining bowl, until well combined. Add the 3 frostings to the same piping bag for multicolored piping or use 3 different piping bags for single color piping. Add frosting to each cupcake as per preference. Or, use an 1A piping tip for the frosting and add googly eyes for the cutest little ghost cupcakes!
