Golden Stuffed Quinoa Squash

Just like these squashes stuffed to the brim with savory quinoa pearls, we are stuffed to the brim with these Golden Stuffed Quinoa Squash. Beautiful & delicious savory fall yummy goodness created with Suncore Foods® Rainbow Quinoa Seeds and Suncore Foods® Hemp Seeds, perfect for your holiday all-in-one dinner or serve it on a relaxed weeknight. Give it a try and add these flavorful to your customizable stuffed squash. It's heavenly!

Ingredients

2 acorn squash, halved and deseeded
2 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
3/4 cup finely diced celery
3/4 tsp salt
1/4 tsp pepper
1 cup Suncore Foods® Rainbow Quinoa Seeds
2 cups vegetable broth
3/4 cup cranberries, fresh or frozen
⅓ cup raw pumpkin seeds
2 tbsp Suncore Foods® Hemp Seeds
2 tbsp vegan butter

Directions

1. Preheat oven to 375 F.

2. Carefully halve squash and remove seeds with a spoon. Place flesh side down on a baking sheet. Roast for 25-35 minute, until squash is tender.

3. Preheat a large saucepan or dutch oven and add oil. Add onions and sauté 5-7 minutes. Add garlic, celery, salt, and pepper and cook for an additional 3-4 minutes.

4. Add Suncore Foods® Rainbow Quinoa Seeds to pan, stir, and pour vegetable broth over the top. Cook until liquid is absorbed and quinoa is fully cooked. Add cranberries and cook until they have just softened. Stir in pumpkin seeds and Suncore Foods® Hemp Seeds. Finish with butter and stir well.

5. Remove squash from oven, flip over and brush with olive oil and sprinkle with salt. Fill cooked squash with quinoa filling. Return to oven for additional 15-20 minutes, then remove and let cool slightly before eating.
