Ingredients
Galaxy Marshmallows:
1 ½ cup raw honey
1 cup water (divided into ½ cup portions)
4 tbsp gelatin powder
¼ tsp sea salt
1 ½ tsp vanilla
Suncore Foods® Powders:
4 tbsp water
½ tbsp Suncore Foods® Aqua Blue Spirulina Powder
½ tbsp Suncore Foods® Blue Butterfly Pea Powder
½ tbsp Suncore Foods® Cerise Prickly Pear Powder
1 tbsp Suncore Foods® Purple Sweet Potato Powder
Cutting and Storage:
¼ cup cornstarch
¼ powdered sugar
Avocado oil cooking spray
Tools:
Large pot (cast iron is ideal)
Candy thermometer
Mixer with whisk attachment
9x13 pan or dish
Sharp knife
Pastry brush
3 small bowls
Silicone spatula
Skewer or table knife
Directions
1. In a large pot on medium high mix together 1 ½ cup honey, and ½ cup water, stir until boiling, then stop stirring. And insert the candy thermometer.
2. In the bowl of a mixer mix ½ cup water and 4 tbsp gelatin, leave the whisk attachment off for now and install the bowl onto base. Note: when stirring do not scrape the sides or bottom of the pan as this can cause the marshmallows to crystallize) if you have honey on the sides of the pot use a pastry brush dipped in water to gently brush down the sides of the pot
3. Heat the honey and water mixture to 242-245 F, once it reaches this temperature remove from heat.
4. Carefully pour the hot honey mixture down the side of the mixing bowl into the gelatin mixture. This will cool your sugar mixture so you don’t scorch the gelatin.
5. Mix on medium high speed, and add the ¼ salt and 1 ½ tsp vanilla, mix for 5 minutes, or until the mixture is white with soft peaks (it should pull up and the tip of the peaks will curl over)
6. While your marshmallow mixture is mixing, in three small bowls add the 3 colors into separate bowls, next add the water and mix to create a smooth liquid.
7. Prepare your pan, line with parchment and spray with avocado oil
8. Once the marshmallow mixture is making stiff peaks stop the mixer, quickly scrape the marshmallow cream into the lined pan with a silicone spatula, smooth out the top
9. Drizzle your three color liquids over the top of the marshmallows then quickly drag your knife or skewer through the colors from Suncore Foods® Powders, these were done in a grid platter, but you can do squiggles or swirls, just limit the amount of movement or the colors will muddy
10. Let set for 6-8 hours or overnight
11. Carefully remove from the pan, use a sharp knife sprayed with avocado oil to help release from the pan if needed, then cut into cubes, after each cut you make, wash the knife with hot water, and spray with avocado oil.
12. To store, mix powdered sugar, and cornstarch toss the marshmallows in the mixture and store in an airtight container.
