Emerald Pandan Leaf Coconut Tart

Silky, airy, and velvety smooth coconut mousse filling made using Suncore Foods® Emerald Pandan Leaf Powder & Suncore Foods® Midori Jade Matcha Powder for the beautiful emerald color with added aromatic fragrant & sweetness. Not only is this gorgeous, it is also properly light & indulgent with the right amount of sweetness. An easy, delicious recipe that you will “wow” your family!


1 cup rolled oats or Suncore Foods® Snow Quinoa Flakes
1/2 cup shredded coconut
1/2 cup raw almonds
3 tbsp maple syrup
2 tbsp nut/seed butter

1 can full-fat coconut milk
Zest and juice of 1 lemon, or to taste
2 tsp agar-agar powder
1/4 cup maple syrup, or to taste
2 tsp Suncore Foods® Midori Jade Matcha Powder (optional; to taste)
2-3 tsp Suncore Foods® Emerald Pandan Leaf Powder


1. In a food processor, blend the crust ingredients into a sticky, sand-like mixture. Transfer to a tart pan and press into the bottoms and sides. Set aside. In a saucepan, combine coconut milk, lemon juice and zest, agar-agar, and maple syrup.

2. Bring to a simmer while stirring constantly, then whisk in the Suncore Foods® Midori Jade Matcha Powder & Suncore Foods® Emerald Pandan Leaf Powder to your desired color and flavor. Once combined, remove from heat and pour into the prepared crust. Place in the fridge to set for 1+ hour before serving. Enjoy!
