Ebony Carrot Melon Pan

Ingredients

Bread: ⁣
200g bread flour ⁣
3 tbsp (35g) sugar of choice
1 tbsp Suncore Foods® Ebony Carrot Powder
1 tsp active dry yeast ⁣
1/4 tsp salt ⁣
100g water⁣
20g condensed coconut milk ⁣
30g dairy free butter ⁣

Cookie Crust:
40g butter⁣
3 tbsp (35g) sugar of choice
1/4 cup (60g) all purpose flour
2 tsp Suncore Foods® Ebony Carrot Powder

Directions

1. Cookie Dough ⁣– Dissolve carrot powder with 2 tsp milk.⁣ In a mixing bowl, whisk butter and sugar until sugar dissolved & creamy. Add dissolved Suncore Foods® Ebony Carrot Powder and gradually add in the flour. Lightly mix with a spatula until all the flour is thoroughly mixed (not to over mix the dough). ⁣Place the dough on plastic wrap and cover. Refrigerate until needed. ⁣


2. Bread Dough ⁣– In a stand mixer, combine all ingredients except for butter. Cover and let sit for 20 mins. Then turn on the mixer, add the butter mix on low-medium speed with the hook attachment until the dough comes together, about 10 - 12 mins. Smooth the dough. Cover and let let proof for 1 hour until doubled in size. ⁣⁣

3. Divide dough into 9 pieces, Shape each dough piece into a ball. Make sure the bottom is tightly closed. ⁣

4. Divide the cookie dough into 9 pieces. Gently roll out the dough until it is large enough to cover the bread rolls. Place cookie dough over bread rolls. Gently roll ball in the sugar until the the green dough is covered. Use a knife to gently score the cookie dough into some sort of criss-cross pattern. Place the dough in a prepared pan (8 inch) Cover dough with plastic wrap and allow to rest for 30-40 mins. ⁣

5. Bake at 180c for 18-20 mins. Serve warm. ⁣Enjoy!
