Blue Butterfly Pea Summer Rolls

Who's looking forward to the warm weather already? For those who can’t wait for summer to start, here’s a taste of our new Blue Butterfly Pea Summer Rolls! By simply incorporating Suncore Foods® Blue Butterfly Pea Supercolor Powder to the noodles, the vibrant blue instantly brightens up your lunch! With a simple few steps, you can create this gorgeous Summer roll!

Ingredients

8 oz rice noodles:
1 tbsp Suncore Foods® Blue Butterfly Pea Supercolor Powder
2 carrots, sliced thinly
2 mini cucumbers, sliced thinly
Purple cabbage, sliced thinly
Fresh mint
Rice paper wrappers

Peanut Sauce:
¼ cup peanut butter
2 tbsp tamari or soy sauce
2 tbsp water
1 tbsp rice vinegar
1 tsp coconut sugar
½ tsp ground ginger
½ tsp red pepper flakes

Directions

1. Bring 8 cups of water to a boil in a large pot. Whisk in blue butterfly pea powder, then add rice noodles. Turn off heat and let noodles steep for 8-10 minutes, until al dente. Drain and rinse with cold water.

2. Whisk together all ingredients for peanut sauce until smooth.

3. Prep all ingredients for summer rolls. Moisten a rice paper wrapper in water for a few seconds, then transfer to a flat surface. Arrange rice noodles and sliced veggies in the bottom center of wrap, leaving space on the right, left and bottom. Fold the right and left sides over the filling, then tuck and roll from the bottom up to enclose the filling. Repeat with remaining rice paper wrappers and filling.

4. Slice in half and enjoy with peanut sauce!
