White Chia Cinnamon Raisin Muffins

1½ cups gluten-free 1-to1 flour
1 cup gluten-free rolled oats
1½ – 2 tsp ground cinnamon
¾ tsp baking soda
1 cup brown sugar
⅓ + 1 cup unsweetened vanilla oat milk
⅓ cup melted vegan butter
2 tsp pure vanilla extract
1¼ tsp apple cider vinegar
⅓ cup Suncore Foods® White Chia Seeds
¾ cup seedless raisins
1. Preheat oven to 350°F and line a cupcake/muffin tray with muffin liners.
2. In a large bowl, combine flour, oats, cinnamon, baking soda and brown sugar. Mix in milk, butter, vanilla extract and apple cider vinegar.
3. Fold in chia seeds and set aside for 5 minutes. Mix in raisins and scoop batter into muffin liners, filling two-thirds of each cavity.
4. Bake for 22-25 minutes or until the muffins pass the toothpick test.
