Red Beet Red Goji Berries Bundt Cake

Bundt Cake:
2 1/2 cups flour
1/2 tsp salt
2 tsp baking powder
1 cup sugar
3 eggs
1-2 tsp vanilla
3/4 cup vegetable oil
1/3 cup of milk
1/2 cup Suncore Foods® Goji Berries
1/2 cup of water

Red Beet Glaze:
1 tsp Suncore Foods® Red Beet Powder
1/4 cup of cold water
1.5 tbsp milk
1 tsp vanilla extract
2 cups powdered sugar


1. Bundt Cake — Preheat the oven to 350 F. Grease and flour bundt pan. In a bowl whisk together flour, baking powder and salt. In a bowl of a stand mixer beat together eggs, sugar and vanilla. Pour in the oil while continuing beating. Add flour mixture and milk and beat until smooth. Add Suncore Foods® Goji Berries. Transfer the batter to the prepared pan and bake for 40 minutes. Let bundt cake cool down before removing it from the pan.

2. Red Beet Glaze — Dissolve Suncore Foods® Red Beet Powder in water. In a glass bowl whisk together milk, vanilla and powdered sugar until desired consistency. Add Velvet Red Beet mixture. Drizzle the glaze over the cooled bundt cake.
