Ingredients
Wet Ingredients:
1/2 cup or 120g fresh lemon juice
1/4 cup or 62g dairy free yogurt
85g dairy free butter, melted
1/2 tsp vanilla extract
1 1/4 cups or 150g all purpose flour
1/2 cup or 65g sugar of choice
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
Pineapple Pompote:
225g fresh pineapple
1/4 cup or 50g coconut sugar
1/2 cup or 120g water water
Chocolate Ganache:
1/2 cup can coconut milk
200g dairy free white chocolate
1 1/2 tbsp or 10g Suncore Foods® Sparkly Amber Passion Fruit Flakes
Passion Fruit Jelly:
200g passion fruit pulp
2 tbsp Suncore Foods® Marigold Passionfruit Powder & Seeds
1/2 cup water
2 tbsp or 24g coconut sugar
1 tsp agar agar powder
Mango:
150g ripe mango, purée
1/4 cup or 60g can coconut milk
2 tbsp or 24g coconut sugar
1 tsp agar agar powder
Pastry:
1 1/4 cups or 150g all purpose flour
1/4 cup or 28g almonds meal
2 tbsp or 15g cocoa powder
1/4 cup or 35g powdered sugar
90g cold dairy free butter
1/2 tbsp or 7g cold almond milk
1 tsp vanilla extract
Pinch of salt
Directions
1. Mix each layer compote in mold and chillin the fridge until needed.
2. Place each layer into the prepared cake ring and place in the freezer for 5-10 minutes to set. Enjoy!
