Purple Sweet Potato Cream Filled Buns

Ingredients

Bread (makes 12):
375g bread flour
5g instant yeast
7g Suncore Foods® Rose Salt
35g sugar of choice
260g milk of choice
38g butter of choice

Sweet Potato Cream:
1 can coconut whipping cream
2 tbsp condensed milk
2 tbsp sugar of choice
1 tbsp Suncore Foods® Purple Sweet Potato Supercolor Powder dissolved


Directions

1. Bread — In a stand mixer, add all ingredients except for butter. Mixing on low-medium speed with the hook attachment until the dough comes together, about 8 mins. Add butter, a few pieces at a time. Scrape down the bowl. Continue to kneading on medium speed for 10 mins until the dough is smooth. Cover let proof for 1 hour. Transfer dough on the counter top. Divide dough into 12, roll each dough piece into a ball and let rest for 10 mins. Roll out the dough. Pinch seams to seal. Cover and let rise until doubled in size, about 1 hour. Lightly brush the tops of the bun with milk. Bake at 180c for 15 mins.

2. Sweet Potato Cream — In a stand mixer add whipping cream, condensed milk, sugar and whisk until smooth. Add in sweet potato powder and mix until combined.
