Passion Fruit Cookies with Chocolate Ganache Filling

Cookies will always be the answer, the question is irrelevant. These delightful passion fruit cookies with chocolate ganache filling bring out our inner cookie monsters! Take a bite into this buttery, crips, and light cookie, and let the chocolate ganache melt in your mouth with happiness. Let's add a little sunshine warm yellow to your table with Suncore Foods® Marigold Passion Fruit Powder & Seeds. This recipe is a keeper, absolutely fun to make, and you can fill it with a lot of chocolate that your heart desired. Let your imagination run wild, while your mouths water, wanting to devour your creations!


240g all purpose flour
5 tbsp Suncore Foods® Marigold Passion Fruit Powder & Seeds
60g powdered sugar
100g dairy free butter
30g soy milk
1 tsp vanilla extract
1/4 tsp salt

110g coconut milk
1 tsp vanilla bean extract
1 tsp instant coffee powder
150g dark chocolate
To make the ganache


1. Ganache — Heat the coconut milk in a saucepan. Pour the hot cream over the dark chocolate, add in vanilla, instant coffee powder and mix until smooth. Place plastic wrap over it so it is touching the surface of the ganache or place it directly into a disposable piping bag. Place ganache in the fridge until needed.

2. Cookies — In a large bowl add flour, Suncore Foods® Marigold Passion Fruit Powder & Seeds, powdered sugar , salt and butter, mixing until combined. Add in milk, vanilla extract and mix until the dough comes together. Wrap cookie dough with cling wrap and refrigerate for 20 mins. Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 10 mins. Allow cookies to cool completely. Pipe the ganache filling on the bottoms of half of the cookies; top with remaining cookies. Enjoy!
