Passion Fruit Chia Seeds Popsicles

Popsicle kisses and summer nights! With this delicious icy Passion Fruit Chia Seeds Popsicles, everything is possible. This delicious treat is a perfect combination of a delightful, fun chia seed layer made with Suncore Foods® Black Chia Seeds & sweet pina colada layers. Achieve this sunny, summer fun using Suncore Foods® Marigold Passion Fruit Powder & Seeds. Take your taste bud to a tropical paradise with this ice cream.

Ingredients

Makes 10 Large Popsicles

Chia Seeds Layer:
255g coconut milk
4g pure vanilla extract
85g Suncore Foods® Black Chia Seeds
3g maple syrup (or to taste)

Passion Fruit Pina Colada Layer(s):
250g fresh mango
90g vanilla syrup (not vanilla essence)
220g coconut cream
190g coconut milk
20g Suncore Foods® Marigold Passion Fruit Powder & Seeds
3g annatto powder

Equipment Needed: Popsicle molds

Directions

 

1. Chia Seed Layer – In a bowl, combine all Suncore Foods® Black Chia Seeds layer ingredients and set aside for 15 minutes, allowing chia seeds to activate.

2. Passion Fruit Layer – Blend together all Pina Colada layer ingredients, annatto powder, until smooth and well combined. Remove half the mixture from the blender and set aside.

3. Annatto Layer – Add annatto powder to remaining mixture in the blender and blend until well combined.

4. Assemble into molds – Start by equally dividing any 1 layer into 10 popsicle molds and follow the same process for the other 2 layers. Freeze overnight and allow the popsicles to thaw for 5 minutes before removing from molds and serving.
