Midori Jade Matcha Chocolate Oreo Cookies
Calling all chocolate and matcha lovers! This combo is a match-a made in heaven. Midori Jade Matcha Chocolate Oreo Cookies with velvety matcha filling sandwiched between crisp and chocolatey oreos. You definitely will need more than one to be satisfied.
Chocolate Oreo Cookies:
1 cup gluten-free flour or regular flour
1/3 cup cacao powder
1/4 cup coconut sugar
1/3 cup coconut oil
1 tsp vanilla bean extract
Matcha Cream Filling:
1/4 cup vegan margarine, cold
1 cup powdered sugar
1 tbsp Suncore Foods® Midori Jade Matcha Powder
1 tbsp coconut milk
1 tsp vanilla extract
A pinch of salt
1. Chocolate Oreos — Preheat your oven to 175 celsius. In a small bowl, combine the flour, sugar, cacao powder, coconut oil, and vanilla and mix until well combined. Cover the bowl and refrigerate for 10 minutes. Roll out the dough. Use a circle cookie cutter, cut out the cookies until you’ve used all the dough. Lay cookies on prepared baking sheets and bake for approximately 15 minutes. Let cool completely before assembling .
3. Matcha Cream Filling — Beat together the sugar, margarine, Suncore Foods® Midori Jade Matcha Powder, salt, and vanilla. The mixture will seem very dry at first, but will eventually begin to clump together. Add coconut milk. beating until smooth. Pipe the matcha cream filling on the bottoms of half of the cookies; top with remaining cookies. Enjoy!
