Goji Berry Chia Hemp Granola

6 tbsp melted coconut oil
¼ cup agave syrup
½ tsp cinnamon
1 tsp vanilla extract
2 cups gluten-free whole rolled oats
2 tbsp Suncore Foods® Black Chia Seeds
2 tbsp Suncore Foods® Hemp Seeds
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup coconut flakes
⅓ cup Suncore Foods® Goji Berries
2 tbsp Suncore Foods® Cacao Nibs
½ tbsp melted coconut oil
1 tsp maple syrup
1. Preheat oven to 300º F.
2. Whisk together melted coconut oil, agave, cinnamon, and vanilla.
3. In a large bowl, stir together oats, Suncore Foods® Black Chia Seeds, and Suncore Foods® Hemp Seeds. Pour coconut oil mixture over oats. Stir well to coat and spread evenly on large baking sheet and bake at 300 for 22-25 mins.
4. While the granola is in the oven, combine ½ tbsp melted coconut oil with 2 tsp agave syrup and add coconut flakes, Suncore Foods® Goji Berries, sunflower seeds, pumpkin seeds, and Suncore Foods® Cacao Nibs. Stir to combine.
5. Remove granola from oven and sprinkle with coconut flakes, Suncore Foods® Goji Berries, Suncore Foods® Black Chia Seeds, and Suncore Foods® Cacao Nibs. Gently stir to mix into oat mixture. Return to oven for 5-7 min. Let cool for 45 min to an hour until it hardens up.
