Colorful Red Beet Quinoa Salad

Reset the new year with this healthy Colorful Red Beet Quinoa Salad made with our super goodies like Suncore Foods® Organic Quinoa Seeds, Velvet Red Beet Supercolor Powder, Rose Salt, Fig Chips, Rose Apples and Strawberry Chips. This salad is as flavorful and nutritious as its bold colors would suggest. Completely irresistible and perfect for easy meal prep. 

Ingredients

Serves 3
Prep Time: 10 minutes
Cook Time: 30 minutes

Quinoa:
3/4 cup dry Suncore Foods® Quinoa Pearl Seeds
1 1/2 cups water or vegetable broth
Pinch of Suncore Foods® Rose Salt
2 tbsp Suncore Foods® Velvet Red Beet Supercolor Powder

Lemon maple dressing:
Juice from 1 lemon, 1/3 cup
2 tbsp maple syrup, add more or less depending on your desired sweetness
1 tbsp olive oil
1 small red onion, finely chopped
Dash of pepper
Pinch of Suncore Foods® Rose Salt

Mix-Ins:
1/4 cup pumpkin seeds or chopped nuts of choice
1/4 cup dried cranberries or other fruit
1 cup Suncore Foods® Fig Chips, Suncore Foods® Rose Apples and Suncore Foods® Strawberry Chips
1/2 cup diced fresh apple
Chopped fresh parsley and mint

Directions

1. 1. Wash the quinoa 2-3 times. Place the quinoa, water/broth, salt, and beet powder in a medium sauce pan. Cover then mix it well. Leave to simmer over high heat until it comes to a boil, around 8 minutes. Lower the heat then mix the quinoa every 2 to 3 minutes to prevent it from sticking to the pan. Leave to cook until the water is absorbed and the quinoa is fluffy, about 15 to 20 minutes total. Transfer the quinoa to a large bowl then leave it to cool for 25 to 30 minutes.

2. Meanwhile, mix all the dressing ingredients in a small bowl.

3. When the quinoa has cooled down, pour in the dressing along with the seeds/nuts, dried fruit, apple, and herbs. Mix well and then leave the quinoa to refrigerate for a few hours
